Veg. Biryani made in Rice cooker Recipe

Ingredients:

  • 1 Cup Basmati Rice

  • 1 tblsp Ghee

  • 1/2 tsp Cumin Seeds

  • 1 Star Anise

  • 2 Bay leaves

  • 1 Onion

  • 2 green Chilis

  • 1 Tomato

  • 1 1/2 tblsp Biryani Masala

  • 1/4 tsp Salt

  • 1 small Carrot (chopped)

  • 1 small Potato (chopped)

  • 1/4 Cups Cauliflower

  • 1/4 Cup green Peas

  • 6 long green Beans (chopped)

  • 15 Cashew Nuts + 1 tblsp Ghee

  • 1/4 Cup Mint leaves

  • 1/4 Cup Coriander leaves

  • 1 1/2 cm Ginger

  • 2 Garlic Cloves


Method:

1. Wash and soak Rice in Water for 30 minutes. Grind 1/4 Cup Mint leaves, 1/4 Cup Coriander leaves, Ginger and Garlic plus 2 tblsp of Water to a paste. Set aside.

2. Heat 1 tbslp Ghee in a pan. Add in Cumin Seeds, Bay leaves and Star Anise and fry for 30 seconds. Now add the sliced Onion and green Chili to it and fry till the Onion turnes translucent and slightly brown in color.

3.Then add in the pre-prepared Mint-Coriander Paste, mix well and fry for 2 minutes. Add in the chopped Tomato and Salt and fry till Tomato becomes mushy.

4. Now add the Biryani Masala and mix well. Fry for 30 seconds.

5. Now add in the chopped veggies and mix well with the masala. Fry again for 30 seconds.

6. Then add in the soaked Rice and mix well.

7. Now pour this Rice veggie mix in the Rice cooker. Add 1 Cup of water, mix everything well, close the rice cooker and let it cook till it turns off. Then open the rice cooker mix all and close it again. Let it stand for another 5-10 minutes.

8. Heat 1 tblsp Ghee in a small pan. Add Cashew nuts and fry till golden in color.

9. Pour the Cashew Nuts with the hot Ghee over the cooked Biryani and mix well. Veg Biryani is ready to enjoy! :)

Garnish with Coriander leaves and more Cashew Nuts if you like. I also mix sometimes some eggs under it. It tastes great with raita together.
