Chicken Fry Kerala Style

Ingredients:
4-6 Chicken legs
5 cm Ginger
5 Garlic cloves
1 Onion
1 tsp Oil
1 1/2 tblsp Kashmiri red Chili powder
1/2 tblsp Coriander Powder
1 tsp black Pepper powder
1/2 tsp Turmeric
1 1/2 tblsp plain flour
1 tblsp roasted Rice flour
1 tblsp Lemon juice
1/2 tblsp salt (or as needed)
8 Curry leaves
1 Spring Curry leaves
Oil for frying
6 cm Cinnamon
1/2 tblsp Cloves
10 green Cardamom
1 tsp Fennel seeds
Method:
1. First of all prepare the spice mix we need for marinating the chicken. For that roast the cinnamon stick, cloves, green Cardamom and Fennel seeds in a pan.

2. Let it cool down and grind it to a powder.

3. Now sieve it through a strainer to seperate the left over big pieces from it and set aside.

4. Put Onion, Garlic, Ginger and Curry leaves together in a grinder and make a paste out of it.

5. Now add the spice mix, kashmiri red Chili powder, Coriander powder, black Pepper powder, Turmeric powder, Plain flour, Rice flour, Salt, Oil and Lemon Juice to it and mix well.

6. Then marinate the chicken with it and refrigerate it for at least 3 hours! Heat oil in a pan, and fry the chicken in medium heat till it is well cooked.

7. Put the crispy Chicken in a serving pan. Heat Ghee or Oil in a small pan and fry some Curry leave in it. Then pour the Ghee/Oil with the Curry leaves over the Chicken and serve.

This crispy Chicken tastes awesome just with Rice and some Curry or Chapathi :) Enjoy!
