Fish Curry Kerala Style

Ingredients:
500 gr. Fish - any
2 Onions - finely chopped
2 Spring Curry leaves
2 tsp. Ginger paste
5 big Garlic cloves - finely chopped
2 green Chilis - slit
2 1/2 tblsp. Coconut oil
3/4 Mustard seeds
1 1/2 tblsp. Tamarind paste
1/2 tsp. Salt
1/2 Cup Coconut milk
1/2 tsp. Fish Curry masala
1 tblsp. Coriander powder
1/2 tsp. Turmeric
1 1/2 tblsp. Kashmiri red Chili powder
1/4 tsp. black Pepper powder
1/8 tsp. Fenugreek powder
Method:
1. Heat oil in a pan and add the mustard seeds and Curry leaves and let them crackle for few seconds. Then add the onion and green chili. Fry till tranculent. Then add the ginger paste and the garlic. Mix well and let it fry for 1 minute.

2. Meanwhile mix in a bowl all the spice powders with water to a thick paste.

3. Now add this paste in the pan to the onion and mix well, let it fry for 30 seconds.

4. Then add 2 Cups of water to it let it boil and add the tamarind paste and salt to it now put in the coconut milk and mix well. Add the fish pieces and let it cook for 30 minutes on low heat. Then put the heat off and let the Curry rest for 2 Hours. (Long resting is not a must, also 30 minutes are ok. It just gives more flavour to the curry)

Fish Curry is ready to enjoy and tastes best with Rice, Pappadum and fried green beans! Truly a dream combo!! :)
