Paruppu Vadai a delicious tea time Snack from Kerala

Ingredients:
1 Cup Chana dal
3 dry red Chilis (deseeded and halfed)
2 1/2 tsp. Fennel seeds
1 1/2 tsp. Coriander seeds
1/2 tsp. black Pepper
1 Onion (finely chopped)
2-3 green Chilis (finely sliced)
2 tsp. Ginger (finely chopped)
1 spring Curry leaves (finely chopped)
3 tblsp. Coriander leaves (finely chopped)
1/4 tsp. Asafoetida
1 1/2 tsp Salt (or to taste)
oil for frying
Method:
1. Wash the chana dal a couple of times. Then let it soak in warm water for 2-3 Hours. Meanwhile prepare all the other ingredients. When the time is over drain the chana dal well.

2. Then add the dry red chilis, fennel seeds, coriander seeds and the black pepper in the mixi and grind it coarsly.

3. Now add the chana dal and salt to the coarsly grinded spices and grind the dal with the spices together also coarsly. You shoud be able to see still some whole chana dal in between. (like in the Picture)

4. Add this chana dal spice mix in a bowl and add all the other ingredients to it. Mix everything well! Then shape kind of flatted balls out of it (see picture). The center should be thicker than the sides.

5. Heat oil in a pan and check if it's hot enough by putting a smal piece of this mixture in it. When it starts directly to bubble it is hot enough. Now place the vadais in the pan and fry it till they are golden and crips. Put them on a kitchen paper towel to remove the excess oil from it.
And that's it, crispy Paruppu Vadai is ready to eat. Enjoy it together with sweet Masala Chai :) We love this Combo <3
