Poha a quick and healthy breakfast

Ingredients:
1 1/2 Cups Poha (medium or thick flakes)
1 medium Potato (cut in small cubes)
1 Onion (finely chopped)
1/2 Carrot (grated)
2 green Chilis (slit)
1 spring Curry leaves
4 tblsp peanuts or Cashew nuts (roasted)
2 tblsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds
1/4 tsp Turmeric
1/8 tsp Asafoetida
Lemon Juice (as needed)
2-3 tblsp Coriander leaves (chopped)
Salt (as needed)
1/2 tsp Sugar
Method:
1. First of all wash the Poha. Then let it soak in water for the time you prepare all the other ingredients. By that time Poha should be kind of soft but also not too soft! Drain the water completely and add the sugar and salt to it. Mix it and set aside.

2. Heat oil in a pan and add the Mustard seeds and let it splutter. Then add the Cumin seeds and the Asafoetida to it, give it a quick stir and let fry for few seconds. Now add the Onions, green Chilis and Curry leaves. Fry it till the Onions are sofly brownish.

3. Then it's time to add the cubed Potato and grated Carrot. Saute it for 30 seconds, close the lid and let it cook on low heat till the Potatoe is soft and completely cooked. Take care not to burn it and stir in between!

4. Once Potato and Carrot are cooked add Turmeric and the Poha to it.

5. Mix everything well and cook on low heat until the Poha turns hot. Check if you need more Salt, add Lemon Juice and some of the Coriander leaves and mix well. Now garnish the Poha with the rest of the Coriander leaves and roasted Peanuts/Cashew nuts.

And that's it :) Poha is ready to enjoy!
